31 Days of Autumn {Day 23}: Pork Tenderloin Recipe

Roast Pork Loin with Apple Topping



1/2 tsp sugar
2 tbsp flour
1 tsp salt
1 tsp dry mustard
1 tsp caraway seeds
1/4 tsp black pepper
1/4 tsp ground sage

4 - 5lb pork loin roast


1 1/2 cups applesauce
1/2 cup brown sugar
1/4 tsp cinnamon
1/4 tsp mace
1/4 tsp salt


1.  Preheat oven to 325F.

2.  Mix rub ingredients together in a small bowl.  

3.  Rub mixture over surface of pork.  

4.  Place pork fat side up on a baking rack in roasting pan and cook for 1 1/2 hours.
5.  Mix topping ingredients together in a small bowl.  

6.  Spread topping ingredients over roast.  

7.  Bake 1 hour longer, until juices run clear and the temperature of the pork reaches 150F.  

8.  Cover with foil and let rest for 10 - 15 minutes.  Slice and serve.
