31 Days of Autumn {Day 26}: Caramel Corn

{This is yesterday's 31 Days of Autumn post.  My family has been struck with illness this weekend.  I apologize and thank you for your patience.}

Ingredients:

8 cups popped popcorn
3/4 cup packed brown sugar
1/3 cup butter
3 tbsp corn syrup
1/4 tsp salt
1/4 tsp baking soda
1/4 tsp vanilla

Directions:

1.  Preheat oven to 325F.  

2.  In small saucepan combine sugar, butter, corn syrup and salt over high heat.  

3.  Bring to a boil.  Boil at a slow boil for 4 minutes without stirring. 

4.  Remove from heat and stir in baking soda and vanilla.  

5.  In a large mixing bowl, pour the caramel over the popcorn and stir to coat evenly.  

6.  Transfer, in a single layer, to a large baking sheet lined with parchment paper.

8.  Bake for 10 - 15 minutes.  

9.  Remove from the oven and let cool before breaking into pieces.   

10.  Store in an air tight container for up to 3 days.
