Lemon Coconut Squares

Lemon Coconut Squares


1 1/2 cups all purpose flour
1/2 cup confectioner's sugar
3/4 cup cold butter, cubed
4 eggs
1 1/2 cups sugar
1/2 cup lemon juice
1 tsp baking powder
3/4 cup flaked coconut


1.  Preheat oven to 350F.

2.  In a medium bowl, combine flour and confectioner's sugar.  

3.  Cut in the butter until the mixture resembles breadcrumbs.

4.  Press into the bottom of a lightly greased 9" x 13" pan.  

5.  Bake for 15 minutes.

6.  In another mixing bowl, beat the eggs, sugar, lemon juice and baking powder until well mixed.  

7.  Pour over baked crust.

8.  Sprinkle coconut flakes over the top.

9.  Bake for 20 - 25 minutes until golden brown.

10.  Cut into 15 - 20 bars and cool on a wire rack.
