Fudgey Black Bean Brownies


This is a "healthier" brownie recipe. It won't taste exactly like a regular brownie, but is still good. I enjoyed it better on the second day after baking.  

Ingredients:

1 can beans, rinsed and drained
3 eggs
1/3 cup melted butter, cooled
pinch of salt if using unsalted beans
1/4 cup cocoa powder
2 tsp vanilla extract
1 cup sugar
1/2 cup semi sweet chocolate chips

Directions:

1.  Preheat oven to 350F.

2.  Grease an 8" x 8" pan.

3.  Blend beans, eggs, butter, cocoa powder, vanilla extract, sugar (and salt, if using) in a food processor until smooth.

4.  Pour into pan and sprinkle top evenly with chocolate chips.

5.  Bake for 45 - 50 minutes until a toothpick inserted in the centre comes out clean.

6.  Cool and serve.  Store in the fridge.
