Snowing!  -19C and snow today.

Finishing my lunch and then playing with Miss C before she goes to preschool.

That I would really love a nap today.

Looking around the house...
Looking pretty clean and tidy.  Paperwork to be moved from the dining room table to my desk.  Miss C is playing in her bedroom.

Lemon Coconut Squares

Lemon Coconut Squares

Ingredients:

1 1/2 cups all purpose flour
1/2 cup confectioner's sugar
3/4 cup cold butter, cubed
4 eggs
1 1/2 cups sugar
1/2 cup lemon juice
1 tsp baking powder
3/4 cup flaked coconut

Directions:

1.  Preheat oven to 350F.

2.  In a medium bowl, combine flour and confectioner's sugar.  

3.  Cut in the butter until the mixture resembles breadcrumbs.

4.  Press into the bottom of a lightly greased 9" x 13" pan.  

5.  Bake for 15 minutes.

6.  In another mixing bowl, beat the eggs, sugar, lemon juice and baking powder until well mixed.  

7.  Pour over baked crust.

8.  Sprinkle coconut flakes over the top.

9.  Bake for 20 - 25 minutes until golden brown.

10.  Cut into 15 - 20 bars and cool on a wire rack.

Happy Homemaker Monday - March 24, 2014


I am finally back in the land of the living!  I sniffled my way through the flu and then had bronchitis.  I'm feeling much better now.  

As I look outside my window...
Sunny, blue skies and -6C.  Slushy everywhere.  We had more snow on the weekend (and more is due this week), but it warms up enough to melt a little bit and then it is slushy.  Yuck!

Right now I am...
Typing up this post, then collecting Miss C from school.  

Thinking...
About what to do with the girls this week as Miss S is on spring break.  It will depend on what the weather is like.

Apple cider vinegar is a fermented product made from crushed and aged apples. The healthiest apple cider vinegar contains "the mother", which is bacteria with many health benefits. My favourite kind is Bragg's.

Prevent an infection by mixing 1/4 cup apple cider vinegar with 1/4 cup warm water and gargle every hour or so.

The acetic acid in apple cider vinegar suppresses your appetite, increases your metabolism and reduces water retention. 

3. Helps clear nasal congestion

Apple cider vinegar contains potassium which can help decrease mucus production. It also contains acetic acid which prevents bacteria growth. Try drinking a glass of warm or cold water mixed with a tablespoon of apple cider vinegar a few times a day. 

4. Boosts energy

Apple cider vinegar combats lactic acid build up in the body, helping prevent fatigue. Add a tablespoon to a glass of water or juice. 

5. Reduces acid reflux and heartburn

Research shows that acid reflux and indigestion is caused by too little acid being produced to properly digest the food you have eaten. Apple cider vinegar helps balance acid production in the stomach. Drink between 1 teaspoon to 2 tablespoons in a glass of water before meals to aid digestion.

That I am longing for spring to arrive!  I'm so fed up with the cold and the snow this year.  Six months of winter is too long.
